Ingredients

The Cauliflower
half a head Cauliflower
4 teaspoons olive oil
1 teaspoon garlic powder
1 teaspoon chilli powder
160ml buffalo sauce
to taste black pepper
The Tacos
8 medium sized tortilla
half a head chopped romaine lettuce
1 avocado
50ml ranch sauce
for garnish coriander

    Heat the oven to 180C. Chop the cauliflower into bite sized pieces and add to a large bowl. Mix in the olive oil, garlic powder, chilli powder and 50ml of the buffalo sauce.
    Spread everything on a baking tray and place in the oven for 20 minutes. Turning after 10.

    5 minutes before the cauliflower is done, heat up the remaining buffalo sauce in a sauce pan or using a microwave.

    Take the cauliflower out of the oven and place it back in the large mixing bowl. Add the heated buffalo sauce and give it a good mix.

    Make the tacos by taking a tortilla, adding romaine lettuce, chopped avocado and cauliflower. Drizzle ranch sauce on top and garnish with fresh coriander leaf.
