Roasted cashew nuts work best. So if you have raw nuts then you'll need to roast them in the oven for a little. You can use salted roasted nuts but if you have unsalted nuts then you can add salt to taste later on. Put the nuts in a blender and blend on a low setting for 8-10 minutes. You may need to stop and scrape down the sides a few times. At first the nuts will crumble and look dry but stick with it and soon they'll start to turn creamy.

For extra indulgence, you can add coconut oil. Melt the coconut oil first and then pour it into the blender. Give it a good whizz to mix it up.

If you used unsalted cashew nuts, taste you butter now and add salt to your taste. Add a little and taste, you can always add more but if you add too much then you risk over salting!
