Ingredients

3 bulbs garlic
1 tablespoon olive oil
100g cherry tomatoes
100ml water
120g spinach
400g tin chickpeas
1 tablespoon smoked paprika
2 tablespoons paprika

This is so quick and easy to make yet packed full of flavour. Serve with brown rice as a light healthy main or as a side dish, perfect with a salad.

Add the olive oil and garlic to a medium saucepan. Heat until the garlic turns golden.

Add the cherry tomatoes and water to the pan. Give it a good stir and heat for another 3 minutes

Add the spinach and stir. Heat for another 2-3 minutes or until the spinach begins to wilt.

Drain the tin of chickpeas and add to the pan along with the paprika and smoke paprika. Stir so everything is coated evenly. Heat for another 4-5 minutes until warm. Serve immediately while it's still warm.
