Chocolate Honeycomb

You might think honeycomb is difficult to make but it’s really not. This recipe is so quick and easy that I bet you can’t just make it once!

Ideally you will need a sugar thermometer for this unless you’re really familiar with melting sugar. The secret to getting a good honeycomb is heating the sugar to a specific temperature. Too low and the honeycomb can collapse and too high you’ll end up with burnt sugar. The sugar thermometer takes all the stress out so you can sit back and worry about how you can keep all this to yourself!

Put the sugar and syrup into a saucepan. Make sure there are no lumps of sugar and give it a good stir to mix it up. Don't stir it after your put the heat on.

Cover a large tray with baking paper. You'll want to have this ready later.

Place the pan on a medium heat and let the sugar melt. This will take 3 or 4 minutes but for best results use a sugar thermometer. Heat to a hard crack temperature, 150C.

Once you hit the magic 150C mark, take it off the heat. Whisk in the bicarbonate of soda and it will instantly balloon up into a cloud of sugary goodness. After a good quick mix, turn it out onto the baking paper you had ready.

Leave it to cool, resisting the temptation to bite into it now while it's still hot! It'll take a good 20 minutes to cool but then you get to bash it up into whatever size chunks you like :)

Break up your chocolate into a glass bowl. Head some water in sauce pan to just below boiling and place the glass bowl on top. You want to glass bowl to sit on top but not touch the water in the pan. The gentle steam from the pan will melt the chocolate. If the water is boiling then you risk splitting the chocolate.

Once all the chocolate is melted, take it off the pan and pour in your honeycomb. Give it a good mix to coat all the honey comb evenly. Put it back on the baking paper and let it cool again... or not! Who doesn't love melted chocolate and honeycomb!
