Ingredients

Adjust Servings:
1 white onion
150g button mushrooms
200g pasta we used dried fusilli but you can use your favourite pasta
600 ml vegetable stock
2 tablespoons nutritional yeast
1 teaspoon black pepper
2 tablespoons cashew butter
1 tablespoon lemon juice
pinch salt (optional)
sprinkle parsley (optional)

    This is proper hearty comfort food. The mushrooms and cashew butter make the dish really filling. Perfect for those cold days when you’re wrapped up cosy inside by the fire.

    Use gluten free pasta if you like, the result will be just as good. If you don’t have any cashew butter then check out our recipe to make your own in under ten minutes.

    Peel the onion, chop in half and then dice into half circles. Put two tablespoons of water in a medium saucepan and turn the heat to medium. Add the onion and cook for 3-4 minutes, until the onion has softened.

    Slice the mushrooms into rough 1cm thick pieces. You can go bigger or smaller depending on how you like it.

    Add the mushrooms, pasta, vegetable stock, nutritional yeast and black pepper to the pan. Bring to the boil, put the lid on and then turn the heat down and let it simmer. This will take about 10-12 minutes for the pasta to cook. Check the pan every 3-4 minutes and give it a stir. If it's starting to stick then add a table spoon of water and stir it up.

    Taste a piece of pasta to ensure it's cooked how you like it. Once done, take the pan off the heat and stir in the cashew butter and lemon juice. Give it a good mix to make sure all the butter has melted and everything is coated in the lovely cashew goodness.

    Taste the dish and you can add some salt if you think it needs it. Sprinkle the parsley for garnish or use your favourite herb. Basil works quite well either. Serve immediately on warmed plates for that extra cosiness or you can store it in an airtight container for about 5 days in the fridge.
