Directions
The secret is the water to rice ratio and the timing. As long as you get that right then you’ll see how quick and easy this can be with minimal involvement. The recipe works perfectly well with white rice or brown. For basmati rice, it’s best to increase the rice to water ratio to one part rice to two parts water.

Weigh 150g of white rice in a saucepan and add 225g of water. The rice to water ratio is what makes this work; two parts rice to three parts water. |

Bring to the boil. As soon as it starts to boil, cover it and turn the heat down low. Set a timer for 15 minutes. Avoid the temptation to lift the lid to see how it's going or to shake the pan. Just leave the saucepan and let the magic happen. |

After 15 minutes, immediately take the rice off the heat. Set the timer for 5 minutes. Again, don't lift the lid. The rice will finish cooking in the steam in the pan. Once the 5 minutes is up, you'll have perfect fluffy rice. |
