4 stars star anise

    These delicious break sticks can be made with any flavour combinations you like and baking them for longer will make them crisper so you can easily adjust the recipe to get them just how you like them.

    Make the dough using the first 3 steps from our classic simple bread recipe. Let it rest for an hour to double in size.

    Grind up the star anise with a pestle and morter, sieve it and add to the sesame seeds.

    Generously flour your worktop. Scrap out the dough using a bread scraper to avoid tearing it. Gently press the dough down to spread it out into a rough rectangle.

    Sprinkle half the sesame and anise mixture on top of the dough and press it in. Now place the dough so it looks like an sheet of paper in portrait. Folder the top down two thirds of the way and then folder the bottom up to cover the dough. It should be a third of the height it was with everything folded snugly inside. Press down on the edges to keep it all in.

    Cut the dough from top to bottom in inch thick pieces. You should get at least 20 in total. Roll each piece in the remaining sesame and anise mixture. The should now look more like bread sticks. Twist the dough to give it some character.

    Bake in the oven at 180C for about 15 minutes to get a firm but soft bread stick. If you like them crispier then bake for longer.
